1 Cut ingredients into desired sizes.

2 Add a little oil or cooking spray of your choice to the pan. Heat pan to 400°F/high heat.

3 Add ham and peppers. Stir around for 2 minutes.

4 Add tomatoes and mushrooms. Stir around for 2 minutes.

5 Add sea salt, pepper, and paprika powder to taste. Stir around for an additional minute. Serve over yellow rice.

2 tomatillos, diced small

½ cup corn kernels

1 t garlic, minced

1 t cumin

1 t coriander

2 T cilantro leaves

Served in warm tortilla wraps.
